Paleo Starbucks Espresso Bean Flax Cakes, grain free, sugar free

I think this recipe should come with a warning.  These incredible little cakes might be addictive and carry a punch!  I considered naming them Bean me Up Scottie's..because I'm flying a little :)  Ok, seriously they're delicious, easy to make and grain free! They're not made with legumes, they are made with flax meal and coffee beans.  I was craving a chocolate covered coffee bean and a cookie..and this is the result!  I use the label "Paleo" a little loosely, I don't think they had Starbucks in the caveman days, but who knows! 
I dipped them in some of my favorite Nutkao Hazelnut spread, softened in the microwave for a few seconds.  Or you can make your favorite sugar free frosting.  Hope you enjoy the ride on my new Paleo Espresso Bean Cakes!

Paleo Espresso Bean Cakes, grain free, sugar free

Preheat oven to 350 degrees

Grease your baking sheet or line with parchment paper

Ingredients:

  • 1/2 cup of my homemade almond butter or your favorite low carb gluten free brand
  • 2 large eggs
  • 2 teaspoons gluten free pure vanilla
  • 1/2 cup coconut oil, softened
  • 1 teaspoon gluten free baking powder
  • 1/2 tablespoon psyllium husks
  • 1-2 tablespoons finely ground espresso beans, depending on how strong you like your coffee
  • 1 cup gluten free flax meal (I grind mine in the coffee mill)
  • 3/4 cup Truvia Stevia Baking blend or your favorite sweetener to taste
  • 10 drops vanilla liquid stevia-opt
Instructions:
  1. In a large bowl, mix the almond butter, eggs, vanilla and coconut oil well.  Stir in the baking powder, psyllium husks, espresso beans, flax meal and sweetener of your choice.
  2. Mix well and let sit for a few minutes
  3. Scoop or spoon small balls onto greased cookie sheet
  4. Bake 8-10 minutes or until just firm and slightly cracked
  5. Cool 
  6. Opt- dip in melted chocolate, softened chocolate hazelnut spread or frost with your favorite sugar free frosting
  7. Store in the refrigerator 
  8. Makes apx a 1 1/2 dozen small cakes.
