Gluten Free & Sugar Free Chocolate Truffles
1 cup of almonds or hazelnuts
4 tablespoons of gluten free unsweetened cacao/cocoa- see note below
2 tablespoons of coconut oil
1 1/2 cups of dates, figs, prunes or any unsweetened dried fruit
2 teaspoons of gluten free pure cinnamon
1/4 cup of Truvia stevia, to taste
1 tablespoon of flax meal or chia seeds
1 tablespoon psyllium husks-opt
- Place the ingredients into a food processor and blend for about 5 minutes until a gooey, sticky mixture forms.
- Don’t allow the walnuts and hazelnuts to become totally smooth as their little crunchy pieces really add to the texture.
- Roll the dough into little balls using your oiled hands and then shake in a large baggie with additional cocoa.
- Or for easy protein bars- press into a large greased baking dish and cut into bars
- Refrigerate over night
