Scrumptious Masa Cornbread Waffles, GF, DF, SF option

Slightly sweet with a lovely cornbread flavor, these waffles are versatile and seriously scrumptious!!  I made them last weekend and then put the cooled leftovers in a baggie and popped them in the fridge.  They warm up great and make a super yummy treat for desert, fast breakfast or dinner. 
Just toss on some fruit and top with a fat free plain yogurt sweetened with Stevia and a sprinkle of shredded coconut. Or pour on pure maple syrup with a over easy egg.  I think they would be wonderful with sausage gravy or chili on them too.  And how about mixing in berries? the possibilities are endless.  You can also use this batter to make corn cakes. Gluten Free Masa Cornbread Waffles

Makes 6 large waffles


1 cup gluten free and non GMO masa flour
1/4- 1/2 cup Gluten Free All purpose flour, as needed
2 teaspoons baking powder 
1/2 teaspoon baking soda
1/2 cup dry milk-opt   (not used in new batch and didn't miss it)
1/4 cup honey or 1 full eye dropper of Vanilla liquid Stevia.
2 eggs, whisked
1/2 cup fat free plain yogurt or   (1/4 cup of yogurt whey)
1 cup coconut milk or almond milk  (use just enough to make a thick batter.  I needed 1/2 cup)
3 tablespoons coconut oil or olive oil  ( I used olive oil)


1. Mix the dry ingredients in a large bowl until blended.  Mix together the wet ingredients. Add the wet ingredients to the dry and whisk enough to get it all well incorporated.  Add a little more milk if mixture is too dry.  It should be thick. 
2. Let mixture sit for a few minutes to soften the masa.
3. Spray your waffle iron with canola oil or for pancakes heat a non-stick skillet over medium heat.
4. Pour apx 1/2 cup batter into each side the waffle iron or on your skillet.
5. Cook until your machine light goes off or waffles are nicely brown.  My light never goes off so I open and check after a couple minutes.
6. Or for pancakes- cook until the pancakes appear dry around the edges and start to bubble up, flip and cook until done, about two minutes.
