The holidays are my favorite time of the year, but I always gain a few pounds at this time of year. It's no fun trying to lose those pesky pounds, so I work hard to cut back on the sugar and carbs in my recipes and still make them taste great. I promise, you will never miss the sugar in these healthy gluten free and sugar free pumpkin bars!

Splendid Chocolate Chunk Chewy Bars, gluten free, high protein

These splendid bars are moist, chewy, packed with protein and have less fat and sugar than many recipes because they are made with sweet potato! I originally set out to make pumpkin bars with  my roasted squash  from Christmas. I made so much of it that I froze it for other projects. But then I noticed that I had mashed sweet potato in the fridge that needed to be used up and it worked great!  So don't be afraid to experiment my friends.  It's part of the fun!

Skinny Gluten Free Strawberry Cheesecake Streusel Bars, low glycemic!

I was going to make a cheesecake, but everyone online was making yummy looking cookie bars...  
so I made a Skinny combination of the two and best of all they're sugar free! They turned out awesome! I love the cheesecake filling and the lower calories.

Skinny Gluten Free Low Carb Magic Bars

Gluten Free Lemon Bars, low glycemic and sugar free options

I have always loved lemon bars so this was a fun recipe to work on!   I've made them with blond coconut palm sugar and with honey. I've used part sugar and part liquid Stevia and have included sugar free options for you too. If you use Almond flour it needs to be very fine, do not use almond meal.  I usually use my favorite Gluten Free Flour blend and have included the recipe.  Once you have your preferences down you can make these in no time!  I hope you enjoy them as much as we do!  Let me know OK?
