Living in Seattle you will find Teriyaki shops in every town. There aren't as many as Starbucks but it's a close race and we love them both. Now my family has retired to a sunnier climate, but the memory of little hole in the wall shops and the wonderful smell while they cook your dinner will stay with me forever.
So, here's my copycat gluten free Teriyaki recipe and I think I did my hometown justice.  I served it to my family and they devoured it. That's always a good sign!

I crave fried chicken....  Especially when hubby and I are grocery shopping and he buys (gluten) fried chicken for himself.  It smells so good and tortures me all the way home from the store!  So I came up with a pretty darn close gluten free recipe and it's baked instead of fried. I also love making my Oven Baked Tilapia this way!

This amazing Cajun Chicken Dirty Red Beans and Rice dish recipe is my husband's favorite. I've been making it for years and I love how fast and easy it is to make! I usually up the rice and broth little to make a big batch so that we have lots of leftovers. Just make sure your pot has room for it to expand. It's even better the next day!

I've been making this recipe for many years and it always comes out wonderful.  Thank God for Tinkyada noodles so that we can still enjoy this heartwarming dish that fills the house with the most wonderful scents of home and family.

Skinny Low Carb Cauliflower Crust Pizza, GF, DF
This wonderful cauliflower pizza crust has almost no carbs!  but will it hold together and taste like a pizza?  Yes!  It's amazing how good it is and easy to make with one head of organic cauliflower and a little cheese.  I love using fresh organic vegetables for my pizza's from our local Space Girl Organics.
The secret to a perfect cauliflower crust is to squeeze the cauliflower in a tea towel after microwaving to get all of the water out. You'll be amazed how much water there is!  Put the cauliflower into a clean towel, fold and twist from the top and really squeeze the water out.  Careful, if you're impatient like me it's going to be scorching hot, so cool before squeezing or wear heat proof kitchen mitts.
Compared to my favorite yeast pizza crust recipe that makes two huge pizza's, this recipe makes about an 18 inch pan pizza.   I like leftovers so I think I'll double the recipe next time.  You need to press the "dough" into a circle and if you are using a pan with holes like I did it will go through the holes a bit.  I just scraped it off the underside of the pan and put it back on top and popped it in the oven.  I came out perfect and after baking it didn't stick to the pan at all.

Gluten Free Hawaiian Coconut Shrimp two ways, Paleo option

This was one of my top 10 dinners when we used to eat out in restaurants.  The first time I had coconut shrimp was in Kauai and I fell instantly in love!  This recipe is my version of how they made it there.  We don't fry food much anymore with Hubby's high cholesterol, but it was fun to try it this way and amazingly yummy.  I think I'll make a Skinnier version in the oven next time and will post soon.  Hope you enjoy!!  xoxo

 You can use any Gluten Free flour you have on hand.  I thought the sweet Sorghum would go well
 I tried the coconut in a bowl but a large plate worked better
 The batter needs to be slightly thick so it will stay on
 Aren't they pretty?  and the smell is...heavenly
 Hubby didn't tell me until later that he burned his fingers holding this shot....he's so sweet

Gluten Free Chicken Dinner with Gravy Recipe

This is one of our all time favorite dinners.  The house smells like heaven and I'm licking the juices off the basting spoon while it cooks!  I make al roasted or boiled chicken weekly so that we can have leftovers, salads, pot pies, or sandwiches, and chicken stock.  I'm sure that most of you already know how to roast or boil a chicken, but it's so darn good that I figured it was worth sharing.    So here you go!  Hope you enjoy!
I start with a washed 4-5 pound roaster in my large baking dish or in a very large pot of water (if you want to boil it)

 
Rub on olive oil and  Season with salt and pepper thoroughly.  I also love Old Bay Seasoning.  It's gluten free!

Gluten Free Sunday Meatloaf Dinner


Sunday evening and it's storming outside, so I made a cozy dinner for Hubby and put on a movie.  Meatloaf is perfect for a lazy Sunday, just mix it up and pop it in the oven.  Then watch your movie while the house fills with delicious aromas...

Gluten Free Chicken Pot Pie, so darn good

I've been cooking gluten free for over 2 years, but I had never tried making a gluten free a pot pie until now, and Oh, baby why did I wait?
My goodness, it was out of this world.  Pot pie's have always been one of our favorite dinners but I just hadn't found any gluten free pie crust recipes that I liked. This is now one of our top 10 dinners!

I love making pizza!  In my previous life, I never attempted a homemade pizza until I found out that I have Celiac. Now that I have, I would never go back!  Homemade is so much better than the soggy ones in the box!

Yes, it's a little work, but it really doesn't take that much time and this is a big MONEYSAVER over buying a little gluten free pizza for $7.00 in the store!!

With this recipe you can make 3 medium crusts for apx $2.00! Boy,  you can't beat that!!

So this is what I do-  (sorry about the old pics with dates!)

This post will show you the PIZZA CRUST and  the PIZZA SAUCE.

I will post my favorite toppings and assembly on another post but it's pretty much whatever you want to pile on and love to eat.  Everything goes on a pizza!!.   Be creative!!

So Here we go!

I make a large batch of dough and split it into 2-3 pizza crusts.  You can do one large and one small or 3 mediums- See recipe below!!
I do the first prebake on all of them and then cool the ones I'm not going to use,  wrap in plastic wrap and foil and  freeze.
This is a big TIMESAVER on busy nights!!  All I have to do is take a crust out of the freezer, make my sauce, top with meat and vegies and cheese and bake for 10-15 min!
Aldi has green peppers and mushrooms on sale all the time and I love them on pizza.  We also use their sausage, pepperoni, mozzarella and parmesan cheeses because they have the best prices I can find.

We have company coming and I've been cooking like crazy and freezing.
Another big TIMESAVER- If you take a day and precook your sauces, meatballs, bread, pizza crusts it will make your life better!  Just freeze and label with the date.   I am so happy when I can pull something out of the freezer and whip up dinner in minutes....it's just heaven.

So as I was saying, I don't want to be in the kitchen the whole time our company is here.  Yesterday I spent the evening making pizza crust and meatballs .  Hubby was out with friends and it was nice quiet evening !  Just me and Jack our lab, cooking and watching girly shows and cooking.  Fun stuff!

We love Frittatas!  On a hot Florida day, it makes a perfect dinner or an elegant breakfast.  I can whip it up in minutes, so not much standing in a hot kitchen is required, and that makes me very happy.
I use whatever is in the fridge and it's always wonderful.  Don't get crazy and pile up the pan too high or it won't cook through, but be creative!
