Gluten Free Light and Flaky Pie Crust,

This crust came out so great that I am posting it with a terrible picture!  I'll redo the pic as soon as I make more pies, but I wanted to get this up in case you need a light and flaky pie crust for the holidays.  Happy Holidays everyone and God bless.

These gorgeous pies start with a very simple gluten free Masa Harina dough.  It takes only minutes to knead and roll the balls and make amazing Empanadas or you can use this recipe to make homemade gluten free Tortillas!

Skinny Gluten Free Fruit Turnovers!

Scrumptious little fruit pies, hand pies, turnovers, or meat pies, just think of the possibilities!  I had so much fun making these and I think you will too!

1/7/13 follow up note.  This dough has been in my fridge for weeks and it's still good!  The recipe makes a lot, but it's great having the dough on hand to make Hubby a pie in just minutes.  I've found I like rolling out larger circles and making the pies bigger. My family loves them and you can get more filling into a larger pie.   Have you tried them yet?  What's your favorite filling?

Skinny Gluten Free Low Carb Almond Meal Pie Crust

My favorite pies, when I ate gluten, were Coconut Cream and Banana Cream.  I really miss how easy it was to make a cream pie.
Remember how we used to pull out a "gluten" pie crust from the freezer and make a pie in a matter of minutes with instant pudding?
Well, today I wanted to do that. Whip up a pie, without breaking the bank!

Skinny Gluten Free Key Lime Pie

I've lived in Florida for over two years now and I've never had a Key Lime Pie...can you believe it?  I think that's almost illegal here!
So, I decided to try making my own gluten-free Key Lime Pie and here's my results.  I hope you love it as much as I do.
Hubby gave it a big thumbs up and I'm sure I will be making it many more times in the future.  It's not hard to make and deliciously low in calories!
This Healthy Gluten Free Key Lime Pie Recipe is made with agave and stevia and so good you won't believe it's skinny
I made the crust with one of my favorite cereals.  I was out of almonds and decided to wing it.  I ground the cereal in the coffee grinder and mixed it with coconut oil, a little butter and some stevia. It reminded me a lot of a graham cracker crust!

Gluten Free Chicken Pot Pie, so darn good

I've been cooking gluten free for over 2 years, but I had never tried making a gluten free a pot pie until now, and Oh, baby why did I wait?
My goodness, it was out of this world.  Pot pie's have always been one of our favorite dinners but I just hadn't found any gluten free pie crust recipes that I liked. This is now one of our top 10 dinners!
