Skinny Gluten-Free Broccoli Salad and Savoring Saturdays

Broccoli Salad is my all time favorite! I drool over it at the deli, but there's no way to know what they put in it! Chances are there's gluten in there somewhere so I have to walk on by. Unfortunately, most broccoli salad dressings are full of fat and sugar too. My new Skinny Gluten-Free Broccoli Salad is much healthier for us and it's so good that I've been eating it as a meal!

I lightened up the dressing and cut way back on the sugar! You will never miss the fat and calories.

Living in Seattle you will find Teriyaki shops in every town. There aren't as many as Starbucks but it's a close race and we love them both. Now my family has retired to a sunnier climate, but the memory of little hole in the wall shops and the wonderful smell while they cook your dinner will stay with me forever.
So, here's my copycat gluten free Teriyaki recipe and I think I did my hometown justice.  I served it to my family and they devoured it. That's always a good sign!

Ginger Honey Kale Salad with pears, cranberries & walnuts, gluten free

Making dinner for the Children's Home and I wanted a salad to go with the organic soup I was making, but all I had was a big head of organic kale from Space Girl Organics.
I'm a firm believer in feeding your kids greens early on, and I love kale, but I worried that it would be too tough or bitter for the little kids.

Gluten Free Strawberry Chicken Spinach Salad with dressing recipe

I love leftover night and this Gluten-Free Strawberry Chicken Spinach Salad is a big favorite at our house.  I use leftover roasted chicken, sliced strawberries or dried cranberries, artisan greens, fresh spinach, chopped walnuts or pecans, Parmesan or Feta cheese and the wonderful raspberry poppy seed dressing that I buy from Aldi or make your own from the following recipe!    Yummo.....:)   a little red onions on top are nice on it too.
