I'm a huge fan of cooking shows. I'm always in awe and inspired by the beautiful food professional chefs make and the techniques that they use. It's so much fun to watch them cook and then I can go do it myself!

What I love the most about watching talented chefs' work is that they describe the texture and taste of a finished product. Gnocchi is supposed to be light and fluffy and a good sauce should have a complex depth of flavor, so that's what I worked to achieve in this new healthy recipe. Luckily, using gluten-free and grain-free flours you can't overdevelop the gluten when you knead this dough, and the finished product is pretty amazing! The creatively crafted Castello Double Creme Truffle Cheese is incredible on its own but combined with some heat and herbs, it makes a sauce to die for.

It's my birthday today and the sun is shining! So I made myself a Gluten Free Spice Cake and had a great day. This deliciously moist spice cake has less fat and sugar but enough of each to give it that real cake flavor and texture. Isn't it gorgeous and it tastes great! Possibly the best gluten-free pumpkin pie I've ever had. I made it with roasted organic winter squash and it's awesome. You won't believe how much better it tastes than canned pumpkin!

Creamy Tomato & Squash Soup, gluten free, dairy free

Soup is so fun to make. I love chopping and tossing everything in a big pot and thanks to Space Girl Organics I have wonderful organic produce to play with. 
Earlier this year we planted one small seedling tomato plant that grew into a monster!  I've had cherry tomatoes coming out my ears.  I'm using them in everything, giving them away, and found that they freeze well too!
The combination of creamy squash and tomatoes in this soup is wonderful.  I also threw in a zucchini that needed to be used up. 
If you don't already know, Delicata squash doesn't need to be peeled! I love that! 
So, I wash the squash, remove the seeds and strings and chop.  I also throw the tomatoes in whole. They all cook down and then are blended into this amazing creamy soup.  I hope you enjoy.

Looking for ways to use up your squash?  How about baking them into a healthy brownie full of vitamins, antioxidants and fiber?  I know, I didn't think it would work either, but I have to say these Stunning Squash Brownies really take the cake!  Now, whenever I see squash in my box from Space Girl Organics, I will be making brownies!

Pink Pearl Apple Stuffed Squash, gluten free

I'm cooking for our local children's home this week and having fun working on recipes for the kids. In my box from Space Girl Organics I found beautiful organic squash and Pink Pearl apples.
I knew the Pink Pearl apples would be perfect for my favorite Stuffed Squash recipe. They are crisp, a little tart, and they hold up really well in baking.
You can serve this as a side dish or desert.  I also like it warmed up for breakfast.  I hope the kid's love it!
